SWEET & SAVOURY MUFFINS

These guys are a great thing to make up as a ‘batch’ cook and have handy as mid morning snacks, as a tummy filler before the gym, pre coffee food cos hormones or just because they are yum!

WHAT YOU NEED (SWEET):

  • 3 small super ripe bananas

  • 2 eggs

  • 1 cup cassava flour

  • 2 tbl hemp protein- or any type you use

  • 1/4 cup flaxseed meal

  • 1/2 tsp baking powder

  • 1/4 cup almond milk

  • 2 tbl cacao butter

  • Dash maple syrup to sweeten

  • 1 tsp cinnamon.

HOW TO MAKE:

Mix all together, add to mini muffin mould and bake for 12-15mins.

WHAT YOU NEED (SAVOURY):

  • 3-4 eggs

  • 2 tsp chia - bloomed

  • Whatever veggies you have- I used green beans, zucchini, tomato, capsicum and roast pumpkin

  • Turmeric powder

  • Celtic salt

  • Fresh dill

HOW TO MAKE:

Mix all together, crumble fetta over the mix and put into moulds and bake for 12-ish minutes.
