HORMONE BALANCING CARROT MUFFINS

This is a great recipe for those wanting a sweet treat whilst still following health goals. Helping the body to excrete excess estrogen as well as healthy fats to assist with balancing hormones.

WHAT YOU NEED (MUFFINS):

  • 2 medium sized carrots

  • 1 cup cassava flour

  • 1/4 cup maple syrup. Alternatively, use 3 tbl monk fruit sugar

  • 2 tbl chia seeds - bloomed and made into a gel

  • 2 tsp cinnamon

  • 1 tsp baking powder

  • 1 egg - can omit if vegan

  • 1 tbl apple cider vinegar

  • 1/4 cup flaxseed meal

  • 1/2 cup almond milk

  • 2 tbl coconut oil

  • 6-8 cacao buttons. Use a little extra coconut oil if you don't have this

WHAT YOU NEED (ICING):

  • 1/2 cup coconut cream

  • 3 tbl lemon juice

  • 1 tbl maple syrup

HOW TO MAKE (MUFFINS):

Grate carrots - pop into a bowl (should make about 2 cups if using medium sized carrots)

Add chia seeds to a cup or glass and cover with tepid water. This will “bloom” the seeds and make them expand, causing a gel like consistency.

Set aside for a few minutes whilst giving a little stir to help bloom.

Add all ingredients to a bowl and mix well. If needing a little more wetness to the bowl, add a dash more almond milk.

Pop into cupcake moulds and bake for 20 minutes on 180 degrees or until they bounce back indicating cooked.

Let cool and add icing.

HOW TO MAKE (ICING):

Blend all ingredients in a small food processor or blender. It should taste a little tart from the lemon juice but sweet enough.

Set in the fridge whilst cupcakes cook and this will cause the mixture to harden, making a good consistency to ice once cupcakes are cooled.
