BOUJEE CRUMBED CHICKEN

This recipe is gluten free, dairy free, suitable for SIBO and most gut concerns.

An excellent alternative to standard bread crumbs with a lower carb and higher content of zinc and vitamin B.

WHAT YOU NEED:

  • 380g chicken breast - this was 2 small organic breasts so suitable for one large free range

  • 1/4 cup & 1 tbl pumpkin seeds

  • 1 tbl nutritional yeast (can sub for grated parmesan if wanting a dairy alternative)

  • 1/2 tsp cumin powder

  • 1/2 tsp coriander powder

  • 1 tsp Celtic salt

  • 1/2 tsp paprika

  • 1/2 tsp basil

  • 1/2 tsp oregano

HOW TO MAKE:

Add all ingredients into food processor and make crumb mixture.

Follow standard crumbing - flour of choice, egg dip then crumb mixture.

Put chicken in pan/oven/airfryer and cook until browned.

Serve with salad, veggies, in a burger or with parsnip mash and steamed greens as I did - Yum!
