Perfect for winter, postpartum or meat free Mondays.

WHAT YOU NEED:

  • 1 1/2 cup lentils

  • 1 cup buckwheat groats

  • 1 tbl apple cider vinegar

  • Veggies of choice

  • 1 tin coconut cream

  • 1 tin crushed tomatoes

  • 1 tsp garam masala

  • 1/2 tsp ground chilli

  • 1 tsp turmeric

  • 1 tsp ginger powder

  • 1 tsp ground cumin

  • pinch Celtic sea salt

HOW TO MAKE:

Soak lentils and buckwheat groats overnight in filtered water with apple cider vinegar.

Choose your veggies - I used sweet potato, pumpkin, broccoli stalks, ginger, turmeric and carrot as orange foods are immunity and this meal was for a postpartum mum a few days following birth so healing is on the agenda.

Add in your rinsed lentils, buckwheat groats, veggies, tinned coconut cream crushed tomatoes with 2 cups of water.

Add garam masala, chilli, turmeric, ginger powder, cumin and a good pinch of Celtic salt.

Combine, mix and cook on low for 90 mins or until buckwheat groats are soft.

You may need to add some water if needed throughout cooking.

This is a nourishing meal for new mums for the good fatty nutrients and minerals all needed for healing and milk supply with added benefit of assisting with fluid retention and wound healing.
